We all have that one dish that is pretty much our signature dish. It just so happens that collard greens happens to be one of mine. My southern soul food style collard greens are simply the best. EVERYONE that has tasted this collard green recipe LOVES it! This recipe was featured in my first cookbook, I Heart Soul Food, but made it’s first appearance online in 2014. Since then it has been the star of many dinner tables, and the cousins just can’t get enough of my soul food collard greens recipe. Let me tell you what you need to make these southern style greens!

Serving Collard Greens with bacon is a great way to get your kids to eat their greens.

Ingredients for Soul Food Collard Greens

  • 4 lbs collard greens, cleaned and cut
  • 1 lb bacon ends, chopped
  • 1 large yellow onion, diced
  • 6 cups chicken, broth
  • 2 cups, water
  • 1 tsp seasoning salt
  • 1/2 tsp ground black pepper
  • 1 tsp minced garlic
  • 1 large jalapeno pepper, sliced
  • 2-3 tbsp of white distilled vinegar

What are collard greens?

Collard Greens are a leafy large green vegetable that are to broccoli and cabbage. They are actually in the same family. This vegetable has a thick stem that must be removed prior to cooking, because the taste isn’t desirable. When cooking collard greens they’re usually boiled, braised, or steamed. They can be cooked with, or without meat.

What do collard greens taste like?

When I’m asked what collard greens taste like I say it’s a cross between cabbage, broccoli, and kale. Collard Greens have a slight bitter taste, but cooking them with different spices can help with that. Some people like to add a tbsp of sugar to bring the bitterness down, but I don’t feel it’s necessary for this recipe. The combination of ingredients used in this recipe are enough for taste, so nothing else is needed.

How to clean collard greens

Like other vegetables, collard greens should be cleaned before cooking. Even if you buy the greens in the bag that claim that they are already clean – CLEAN THEM! You can do so by making sure that your since is clean prior to cleaning your greens. Once the sink is good to go, add in the collard greens, and fill up the sink with cool water. Add a few tablespoons of vinegar ( white, or apple cider vinegar), and let the greens soak for 10-15 minutes. After soaking, gently rub the greens to remove any dirt. Drain the water, and rinse the green. Continue to repeat the steps until the greens are dirt, and grit free.

You can use bacon, ham, sausage or any flavorful meat to add a delicious, savory flavor to these soul food collard greens.

How do you make collard greens taste good?

The key to making delicious collard greens is making sure that they are properly seasoned, and cooked! Southern Style Collard Greens are known for being tender. Therefore you must be sure that the greens are cooked long enough. If you undercook the greens, they will be tough. I like to take my time when I cook my collard greens. I let the collard cook slow in spices, and broth until they are extremely tender.

How to season collard greens

There are many ways to season collard greens, but southern collard greens are usually seasoned with smoked meat such as ham hocks, salt pork, smoked turkey, or bacon. Garlic, onion, and spices are also used to season the collard greens while cooking. There are also seasoning blends dedicated to seasoning collard greens such as Rosamae Seasonings Greens Seasoning, that is the perfect blend of salt, spices, salt, garlic, onion, peppers, and a dash of vinegar!

How many hours do greens take to cook?

For this recipe it takes a little over an hour to cook the collard greens. The Collard Greens are boiled in a combination of chicken broth, water, and bacon dripping until tender.

Instructions on how to make collard greens

  1. Place the bacon ends in a pot, and place the pot over medium heat.
  2. Brown the bacon then add in the diced onions, and cook until the onions start to sweat.
  3. Add in the minced garlic, then cook for 1 minute.
  4. Pour in the chicken broth, and turn the heat up to high and let boil for 20 minutes.
  5. Pour in the 2 cups of water, and turn the heat down to medium.
  6. Start adding in the collard greens into the pot.
  7. Once all of the greens are in the pot, sprinkle in the seasoning salt and ground black pepper.
  8. Add in the sliced jalapeno, and the vinegar and stir the ingredients.
  9. Cover the pot, and let simmer for 1 hour and 10 minutes over medium heat. Be sure to peek in, and stir periodically.
  10. Enjoy!

Can you overcook collard greens?

I’ve been asked this question a few times in the past. The answer is yes, and no. It really depends on how you cook the collard greens. However, if you follow my recipe for these collard greens you can not overcook them. Collard greens tend to be on the tough side, so it’s extremely hard to over cook them unless you burn them, which would obviously be overcooking them. If you boil or braise collard greens they will be hard to overcook. Usually the longer you cook collard greens, the more tender they will be!

What to serve with collard greens

I have a ton of dishes that pair well with collard greens. However my Southern Sweet Cornbread is always a winner. If you’d like to make a full southern dinner add these recipes to the menu as well

The Best Soul Food Style Collard Greens

This classic southern soul-food style recipe for collard greens is an instant crowd-pleaser! Add different proteins, like ham or bacon, to give these delicious greens a savory flavor.

            Hello Rosie. So I only wanted to do half of this recipe. Everything was going great and snarled amazing until the pot ran out of moisture and it completely burned on the bottom. The whole batch was ruined. I’m so sad! This is my favorite veggie and never see it offered anywhere. Been wanting this for years now. Any ideas where I went wrong or how to better modify a half recipe of this? Perhaps my pot was too big? I’m not a seasoned chef but follow directions pretty well. Please let me know thank you.

          I have never made collard greens before, and I don’t think I’ll need any recipe other than this one. I made these as a side with some fried fish and everyone loved them! I followed everything in the recipe exactly, only adding about a tablespoon of mustard seeds when I added the collards. They were absolutely perfect, so much better than any restaurant greens I’ve had.

    Hi Rosie!! These greens look so tasty and I can’t wait to try them! I usually cook my greens with smoked turkey legs because a few of my family members don’t eat pork. However, I’m a HUGE fan of bacon (YUMMY)!!! My question is did you just cut the ends off of your bacon? Would it make a big difference if I just cut up the whole slice of bacon?

    I fixed this for my hubby and now I fix them every week. He just cant get enough! I am a very busy mom so I wilt mine a little bit in a pot of water then place them in the crock pot on low for 3 hours or so and then on warm after they cook enough. I also add the bacon 30 min. before I serve them so it is crisp. I just LOVE this recipe. Thx so much for sharing!

    I was wondering about the bacon you used what kind of bacon, the fat back bacon or just regular bacon

      Hi Tomika,
      I used bacon ends. “Bacon ends” tend to have more fat than regular bacon. Bacon ends can be found near the other bacon at your local grocery store. It may be labeled as ” bacon ends & pieces” .

    These greens are full of flavor and super easy to make. I think I boiled the chicken broth too long or had the stove on too high because a lot of the broth boiled away… There still wasn’t enough juice even after I added the 2 cups of water. Even after that little hiccup the greens were still delicious. Thank you so much!

      You’d clean the greens like you would clean all your other veggies. With a little bit of vinegar and lots of water. You can buy the already cleaned greens at the store, but still rinse them before you cook them.

    You are by far the best cook EVER! I sooooooo enjoy your recipes. My family enjoys them even more. I’ve tried the layered spaghetti, fried cabbage, sherpherd’s pie and the collard greens.       I use several brands. Usually whatever is on sale. If using bouillon, be sure that you know how much liquid to add as well.

    Hi! I have tried to make greens like my bf mother who passed a year ago. Only one resturaunt in town makes them like her but even the family size order is too small for him. He said she used jalapeno pepper and bacon as well but I cant figure out what makes the sweetness?

    Any help would be appreciated!

      Some people add a few tablespoons of sugar to their greens to add sweetness. You can try adding a little sugar. Try adding 1 tbsp at a time until you reach your preference.

    Rosie! I have made these a handful of times now. Your recipe is always my go to! My husband and I LOVE these. We’ve also introduced a lot of people up here in the PNW to these, and they are all shocked at how yummy these are. Collards aren’t common here, but in our home, we make sure they are thanks for this wonderful recipe! Very flavorful!

    Hello! Thank You for your step-by-step recipes. I am eager to try them out for the 1st time. I want to start off trying your Southern collard green recipe. However, my daughter does not eat pork and I would like to substitute bacon with a smoked Turkey wing. Would the steps in this recipe still apply ?

    I hate to admit this because I’ve been told I’m a good cook, but your collards are a hundred times better than mine! The way the smoky bacon flavor goes all through the greens! The way the sweetness of the onion lets you know the onion was there, even though it’s all cooked away to nothing! Oh, bless me, these are so good!     I just found you! I have searched for a long time to find recipes that closely mimic the food I grew up on. My Mom passed in 2011 and I have struggled to get my Holiday recipes as close to my Mom’s as possible. She never measured anything but always told me to taste my food to figure it out lol! While my family thinks I nail it every time, I’ve always struggled, nervous that I didn’t add something or too much of something! Nevermind my nieces are always calling me to ask how much of this or that or whats your recipe for…! Now I can tell them something other than a little bit of this and a Lil bit of that!

    Absolutely delicious!!! I found this in Pinterest, thank you for sharing your recipe! I’m finding that many southern staples I didn’t like when I was introduced to them as a child was actually because of how it was prepared. This recipe was very easy to follow and tastes amazing.

    Question…have you tried freezing them? I have several bags of garden fresh collards and I’m hopeful that I can freeze them (cooked or uncooked) and still enjoy the same taste.

    time I made collard greens I used this recipe and they came out amazing. I couldn’t for the life of me find where I pinned it and used a different recipe the next time.     So… GOOD!!! Love these! I did use the whole bacon since I did not have bacon ends/pieces! My friend that says no I don’t eat collard greens LOVED THEM!! They had such a great flavor. It is just me and my husband now for the most part so next time I might half the recipe. I made these in my dutch oven. They were perfect!!!!!

    Are the greens really spicy with the addition of the jalapeno? I like trying recipes as written before I put my spin on things because sometimes things are perfect the way they are. I digress. I’m asking because I don’t like really spicy food. A hint of spice that goes away after leaving a blanket of warmth on your tongue is okay, but extreme heat is a no go for me.

    Hi Rosie, thank you for sharing this recipe! I love collard greens and am usually grudgingly sharing…
    The recipe I’ve always used was really simple, collards, bacon, onion, seasonings and vinegar. I’ve never added broth to it.
    I am going to try your recipe minus the jalapeno, I’ll add a little bit of red chili flakes instead. I imagine the broth will really add flavor. Looking forward to trying it!

      You can use turkey bacon, but it will not be as flavorful.. If turkey is used, I suggest smoked turkey wings 😉

    I really appreciate this recipe and video! I’m so excited to be making this but am making it for my sister who does not eat pork. I have two questions:

    1) If using smoked turkey wings, do I sautee the wings in a pot with some onions as you did in the video before adding the greens?

    2) Do I clean the greens the same way you did in your turnip greens video with salt and apple cider vinegar?

    I’m only 24 years old and have been asked to make majority of the dishes at my family’s thanksgiving dinner this year. It’s all thanks to the recipes on your blog ESPECIALLY this greens recipe. It is amazing, so simple but packed with flavor. Everytime I make this dish I get praises!     I haven’t tried thus recipe yet, but I can’t wait to for Thanksgiving. Would it be okay to use greens in a bag that are already clean instead of using the ones out of produce? I will follow the rest of the recipe to the T. I just get lazy cleaning greens sometimes. Also would it be okay to use smoked turkey instead of bacon? Thanks again for your amazing recipes.

    When I make my greens I add a little bit of crushed red pepper and no vinegar. Let me tell you…fiyah! I also use smoked ham hocks. I have used a bouillon cube to season as well. So delicious! Thank you for this recipe. I may have to try the vinegar.

    Rosie, I just started cooking collards this year… I love CABBAGE! Therefore, I never really ate them… didn’t really care for them. I hit you up a few years back and asked, “can you make a greens/cabbage mix video?” And you responded and made one!     I love all of your seasonings so much but the greens seasoning is a very welcome addition to my cooking repertoire. Thank you for adding the spice of life to all of my cooking.     I hate that my Grandma and my Mom aren’t here to answer my cooking questions. After using this recipe, I don’t need to ask anyone anything! My 4 year old won’t eat anything else if I make these greens. Sometimes I use red pepper flakes instead of jalapeños but thas the only change. I really need some of your Greens seasoning Cousin to set these greens right off!

    I REALLY LOVE ALL YOUR RECIPES.
    THE FIRST TIME I USED THE COLLARD GREENS RECIPE I WAS COOKING EARLY FOR THANKSGIVING. I USUALLY COOK A CASE OF COLLARDS(19 BUNCHES) HONEY WILL I TELL YOU WE ATE MOST OF THOSE GREENS UP THAT NIGHT AND THAT NEXT MORNING OMG… HAD TO GO GET MORE GREENS TO REFILL FOR THANKSGIVING AND HAD TO FREEZE THEM BC WE WE’RE BURNED OUT!! YOU’RE THE GREATEST❤️

    How much of your “Greens Seasonings” would you add to this pot?
    Would you eliminate the salt, pepper and garlic called for in the recipe?

    This is a beautiful base. I always add a little something. Change out the jalapeno for red chili flakes, use que Rico vinegar, and our favorite collard seasoning from “Sisters” restaurant. I always get asked to make these and this is the recipe that gave me the confidence to do so. Thank you so much!!!!!

    I’m making these for the second time today. I used your recipe at thanksgiving for family in Arizona, who all said they didn’t like greens. They all LOVED them! I’m making these for my family for our New Years Day food today. I did add some extra chicken bouillon because I just love the richness. Thank you for sharing!

    Hi Rosie, I grew up eating greens my Nanny made and loved them. But I have to say these are the best I have ever had! My whole family requests them from me for the holidays.
    I have one step that trips me up every time. I get confused about the weight of the greens. I like to buy them fresh and cut them myself because the bags have a lot of stems in them. When you say 4lbs do you mean prior to cleaning and cutting? I noticed one time my bacon ratio was off and they weren’t as flavorful. So now I worry I will have the wrong ratio each time I make them. So I would like to figure this out once and for all and make a note on the recipe I have printed.
