So you’ve read the title, and some of you maybe confused, but others are screaming “IT’S ABOUT DARN TIME ROSIE!!!”. This cabbage and collard greens recipe has been requested for almost two years, and I apologize for not doing it sooner, but it’s better late than never.

So to get started for this cabbage and collard greens recipe I used regular smoked bacon. I know, usually when I make greens, or cabbage I use ham hocks, smoked turkey, or even neck bones. However I wanted to show y’all that bacon can certainly be used, AND it cooks a lot faster!

Speaking of FASTER – to cut down on the prep time, I like to buy the greens in a bag. You know the kind that are already cleaned and cut? Yup, Those! However, I still give them a good rinse before cooking!

Now for all of my non-pork eaters, Don’t worry! You can use turkey bacon. I suggest adding 2 tbsp of vegetable oil while frying the turkey bacon, so that

Soulful Cabbage & Collard Greens

Tender collard greens and cabbage cooked with bacon, onions, and the perfect touch of seasoning. This is the perfect soul food side dish!

Ingredients

  • 1 large head of green cabbage
  • 2 lbs collard greens cut
  • 1 large red bell pepper
  • 1 large onion yellow, white, or red
  • 1 lb smoked bacon chopped
  • 1 1/2 cup water
  • 1 tbsp minced garlic
  • 2 tsp seasoning salt
  • 1 1/2 tsp coarse black pepper

Instructions

  • Make sure that you wash the cabbage & collard greens before anything else. Then cut and slice.
  • Place a large pot over medium high heat, then toss in the sliced bacon.
  • Cook the bacon until it browns a bit, then toss in the onions, and the red bell peppers.
  • Once the onions and bell peppers start to soften, start adding in the sliced cabbage, and collard greens.
  • Fold the ingredients, and once all the cabbage and collards are in the pot, toss in the minced garlic.
  • Pour 1 1/2 cup water, then sprinkle in some seasoning salt, and black pepper. Give everything a nice stir.
  • Reduce the heat to medium, and cook for about 45 or until cabbage and collard greens are nice and tender

    Tell me using turkey bacon is it less fating?
    My mom maid this for years I was raised on country cooking but it’s always very high in calories. Dr’s orders to bring my weight down so looking for good taxing food but low calories

      OMG!!!!! I do not cook, but I wanted to make my husband a home cook down south meal with all the fixins’ (lol). He enjoyed every bite. (made along with smoothered pork chops and cornbread, etc etc.

    I “watched” the cabbage and collard greens for awhile, but they didn’t do anything! Step 1: says to “watch” instead of wash and well that made laugh. Cant wait to try this, and I don’t even like to cook.

        Wish I would have saw this recipe earlier! I came to your site to ask you a question- this is the first time I’ve cooked greens I cook two bags of the bag greens they are good but to a lil to salty!!! How can I get rid of some of the Salt. Next time I’m going to try this combo looks great!!

    Hi! Rosie … I am a big fan of your recipes and have a question about printing options?
    The pictures do not print with the recipe … they would bring such a flair to the printed script. Not sure your website is set for this … but it would be nice to have if at all possible? It’s just something that gets my attention when searching to make something, I guess?

    My questions: Do you drain the grease from the bacon at all or just add the onions and peppers? Also, if using chicken broth instead of water, do we use the same measurements?

    Can you convert this to a Slow Cooker (CrockPot) instead of cooking on top of the stove. Like cook your bacon, peppers, and onions in skillet then dump over into Slow Cooker then add the cabbage, greens, chicken broth and seasonings; stir; and cook about 45 minutes to a hour? I may have to try this to see how it works since I have cabbage in the garden, mustard greens I put up in the freezer and go from there!

    I cook my greens like that. I use collard, turnip, cabbage and spinach. I cook my collards and turnip first until they get done then I add my cabbage since it don’t take cabbage long to cook then 5 minutes before I turn the burner off I add my spinach cover it up and let sit. Talking about some good greens.

    Super delicious Rosie. I watched the video and then made this dish according to your printable recipe. If I could make a suggestion please? I went back in and watched the video again because I wanted to send it to my daughter. In the video you say you usually use chicken broth but didn’t have any so you used water. The recipe says to use water, which I did but would have used chicken broth had I remembered you said you use it. I did sprinkle pepper flakes because I always put them in my greens but the written recipe does not mention this as an option. Just an FYI so your followers who use printed directions know. My hubby said to me that this would be a great accompaniment to our Thanksgiving dinner instead of greens! When he says something about a dish I know it’s GOOD. Thank you Rosie!!!!

    This is so good. I”m not from the south but moved here a few years ago. I tried collard green but didn’t like them, until I found your recipe. Now I make them at least once a week.     Hi,

    This recipe sounds really good. I cook as well and let me tell you this dish is so perfect around the holidays. My recipe is similar to yours, however, I use chicken broth (adds so much flavor), brown sugar and red pepper flakes.

    Hi Rosie,
    I made this recipe and it was delicious! However, I am a vegetarian and used Beyond Burger sausages in it instead of bacon. I cooked the sausages first and then added everything else. Making it vegetarian, gluten free and vegan all with this change. It is soooo good.
