 A quick and easy Tex Mex Ground Beef Skillet dinner made in under 30 minutes!

Hey y’all! As requested I have a quick and easy dinner recipe for you. I’m going to show you how to make a easy and delicious tex mex ground beef skillet! This dish is perfect if you’re pushing for time, and want something made within 30 minutes. Not only is this meal easy on your time, but it’s easy on your pockets as well. I use super affordable ingredients such as ground beef, rice, corn, and beans. Most of the ingredients used, if not all, you probably already have on hand!

This skillet meal has all the flavors of the Southwest in one bite. Look at the corn, beans and peppers mixed in with the rice.

The ground beef that I used was regular ground beef. You can use lean if you choose. If you decide to use regular ground beef like I did, be sure to drain all of the fat once the meat if browned.  If you’re not a fan of beef, feel free to replace it with ground turkey.

This flexible recipe lets your substitute turkey if you want a leaner option.

I used a can of low sodium Rotel for this recipe. You can use a generic brand, or regular canned tomatoes if you’d like. Just make sure that you drain the liquid from the can before adding the tomatoes into the dish.

This Tex-Mex Skillet is a great weeknight dinner that is sure to please your family. Try it with tortilla chips on top!I used canned black beans for this recipe. Before adding the beans into the skillet, I made sure to drain the liquid from the can, and I also rinse the beans under cool water.

If you’re not a fan of black beans you can use red beans, or pinto beans. You can also leave the beans out altogether if you’d like.

Tex Mex Ground Beef Skillet

This tex-mex ground beef skillet is a perfect easy weeknight dinner. Use your favorite veggies, like black beans, Rotel tomatoes, corn, and rice for a hearty and flavorful dinner.

Ingredients

  • 1 1/2 lb ground beef
  • 1 1/2 cup brown or white rice I used rice that was made the day before, and refrigerated
  • 1 cup frozen corn
  • 15 oz can of Rotel drained
  • 1/2 cup canned black beans drained and rinsed
  • 1/2 cup chopped green onion plus 2 tbsp to top off with
  • 1/2 cup sharp cheddar cheese
  • Homemade Low Sodium Taco Seasoning
  • 2 tbsp Mrs. Dash Seasoning
  • 1 1/4 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp garlic powder

Instructions

  • Brown the ground beef in a skillet over medium heat. Drain out all of the fat
  • Sprinkle in all of the seasonings, and stir.
  • Add in the corn, rotel, and green onion, then mix the ingredients.
  • Cook for five minutes then add in the rice, and fold in all of the ingredients.
  • Next, add in the beans, and stir the ingredients until well combined.
  • Cook for 5 minutes or so, then turn off the heat, and top with cheese and green onions.
  • Serve and enjoy! XOXO

    Thanks so much for your great and short video. I was craving some kind of ground beef, rice, and veggie skillet tonight, but I hadn’t thought of Tex-Mex seasoning until I found this recipe.     This recipe its super delicious, I made it with lime-cilantro rice and I got the store bought tacobell seasoning and added fresh garlic, red onion and homemade sofritto to the meat. I also added some taco seasoning to the other imgridients except the rice. This recipe its super quick and amazing. Thank you

    I am so glad I found this! I was looking for a ground beef recipe that WASN’T meatloaf, stroganoff, meatballs or tacos!     I cant wait to try it! Question… The recipe says “low sodium taco seasoning” and then it has some seasonings listed below it. Are those the ingredients of the taco season, or are they in addition to your taco seasoning mix?

    This recipe turned out great! I also added sautéed green pepper and onion, and diced,fried potatoes. When it was done I topped it with the shredded cheese and I also added a few avocado slices on top. The whole family loved this meal! This is a great recipe that you can customize, it would also be great with pan seared chicken strips instead of ground beef!

    I was going to make tacos but my taco shells turned out to be all broken and not very tasty. Already had my ground beef browning, so went looking for something else and found your TexMex recipe. I had to substitute some stuff. Hubs doesn’t care for rice so I cooked up some noodles. I used my homemade hot salsa instead of the Rotel and eliminated the taco seasonings. I used black beans and added regular onions and green peppers to the burger while it was browning. I debated on the corn but last time I made a mixed up dish I used corn and hubs said he’d rather his corn on the side. Hubs asked if this was my own creation and oh — I had to say YES because who doesn’t like to be complimented. He thought it was a keeper. Thank you for the recipe — am going to come back here often and check your recipes out.

    So hard to find a great low sodium recipe but you’ve nailed it! Had to leave out corn (can’t have it) was going to add peas but thought that would be weird with taco seasoning 😉 Thank you so much for a great recipe! You’ve got me excited about food since being put on a low sodium diet.

    I especially liked the homemade taco seasoning, so much better than store-bought. I added smoked paprika instead of the regular paprika, and also cumin. I used fresh corn cut off the cob instead of frozen. Delicious, quick, and easy!

    THANKS SO MUCH, ROSIE!! This has become one of my #1 go-to recipes and everyone likes it – every time. Even tho the recipe is fine as is, I find it doesn’t hurt to make small substitutions (like white onion + celery when I don’t have green onion) – still tastes a-mazing. I’ve made it with ground beef, ground chicken and Morningstar Farms (vegan) crumbles, and they all taste superb in this recipe. Also have tried day-before brown rice and day-before white rice – both great. And different kinds of beans – black, pinto, red kidney – home made and canned. Can’t go wrong with this recipe – 100% delicious!!

    Thanks for this recipe! I had to make a couple of substitutions due to being in UK (used a small tin of chopped tomatoes and added green chili instead of Rotel and Mrs Dash seasoning isn’t a thing here. I also used brown onion instead of green) The dish was excellent, quick to make with little fuss. I served it with authentic tortilla chips. Will definitely make again! Got lots of leftovers for the coming days also 🙂

    I was wondering if you or anyone else had ever used cooked elbow noodles instead of the cooked rice? If so how much would you suggest? Also besides the chips what else could you use for a side dish? I’m ok with the chips but my husband and son like more than just one thing on their plate…lol.
