Hey cousins! Because of everything going on right now, I’m going to change everything up a bit. Instead of making more oxtail recipes, and etc, I thought it would only be right to stick to budget friendly recipes right now. Because of this quarantine, so many of us a stuck in our homes, have limited ingredients. So I’m going to try to keep things as easy as possible, and I’m going to get started off with quarantine dish # 1 – Chicken & Sausage gumbo!

Serve Chicken and Sausage Gumbo with a side of white rice.

Delicious & easy gumbo with chicken and sausage

Unlike my other gumbo recipe, there is no seafood in this one. Just some cheap chicken and sausage. I’m going to be using what I have in my freezer! I suggest you do the same. For the chicken I decided to use wings, and for the sausage I used some spicy sausage that I had on hand. If you have another piece of chicken that you’d like to use, feel free to do so. The same with sausage! However I don’t recommend using breakfast sausage!

Chicken & Sausage Gumbo

Spicy sausage, tender chicken, creamy sauce and savory vegetables make this gumbo a delicious comfort meal the whole family will love. Enjoy with a side of rice.

Ingredients

  • 4 lbs chicken I used wings
  • 1 lb sausage smoked or spicy
  • 1 cup chopped peppers & onions
  • 1 1/2 cup vegetable oil
  • 3/4 cup all purpose flour
  • 2 cup okra
  • 3 tsp creole seasoning
  • 1 1/2 tsp ground black pepper
  • 1 1/2 tsp garlic salt
  • 2 tsp thyme
  • 6 cups chicken broth
  • 2 cups steamed hot rice

Instructions

  • Season the chicken with the garlic salt, 1 tsp thyme, 1/2 tsp black pepper.
  • Pour the oil into a pan, and heat up over medium. Once the oil is nice and hot, start adding the chicken in, but be sure not to overcrowd the pan otherwise the temperature will drop!
  • Once the chicken is browned ( we're just browning it at this point!), remove it from the oil, and put it in a large pot( the pot you will be cooking the gumbo in).
  • Next, carefully pour oil into a boil , but do not discard because we will be using it later!
  • Put the pan back on the burner, and toss in the sausage. Brown the sausage, then toss it in the pot along with the chicken.
  • Now add the peppers and onions into the pan, and cook until they soften. Toss the peppers and onions into the pot along with the chicken and sausage.
  • Pour 6 cups of chicken broth into the large pot, then place it over medium high. Let cook for 45 minutes.
  • Next pour the reserved oil back into the pan, and heat over medium.
  • Once the oil is nice and hot, sprinkle in the flour, and whisk.
  • Continue to cook the roux until it's nice and chocolate brown (Milk chocolate… not dark chocolate y'all! LOL). Then turn off, and remove the pan from the heat.
  • Head over to the pot and add in the roux, and remaining seasonings.
  • Give everything a nice stir, and cook for 10 minutes.
  • Add in the okra, and stir. Cook for another 20 minutes or so.
  • Serve and enjoy with rice!

    Can’t wait to make this!! Would this work with chicken thighs or legs as well? And when you cook the wings does the meat usually fall off the bone after? Or do you go in or shred.

    If u want another vegetable instead of okra u can always use celery. Just do with the celery everything u do with the peppers n onions!

      You can used it. Since it’s already cooked, it will cut the cooking time down.

    Hi Rosie! Bless your kind heart for posting this receipe during this time. I am using a slow cooker rather than the “large pot”. I am thinking of using the high setting for 4 hours, but is that too long? Also, using the slow cooker will this alter the roux once the roux is added? Wanted to know your thoughts! Thank you!

    Thank you for this easy recipe during this time! I made it last night and it was delicious! Instead of okra, I used pre-sliced string beans as this is the closest thing I could find in Amsterdam that would help thicken the gumbo, it was a great substitute! Will definitely be making this again 🙂 keep these simple recipes coming!

    Hey all, so I made this to the tee tonight, only difference is I added celery, bay leaf and a sprinkle of file powder ecause I saw my God mom make it with that. SURPRISED MYSELF!!! When I tell you it was an absolute hit… we tore it up with white rice! Also made enough servings to drop one to my god mom in the morning, she will be SO proud:) I just need to get a bigger pot for next time! I am NOT a cook but excited to try out more of your recipes I found you on YT via Lexi. Thank you♡♡♡

    I made this and it is excellent! Added some extra (sweet) paprika just because. Also tried serving it with cooked millet as well as rice (on different evenings…). Millet works too! I’ll definitely make it again. And when the travel restrictions lift and it’s safe, I hope to make it for the family back in Virginia.

    Rosie Honey!! I made this last night and it was absolutely perfect! Only thing I did different was I used cut up boneless thighs and added a few more seasonings to my chicken ( the southern in me couldn’t help it..lol). This meal was quick, easy, and my family loved it! I will definitely be added this to my recipe book! Thank you for helping us moms continue to be great in the kitchen!

    My husband and son really enjoyed it. I added the sausage for them since I don’t like sausage. I ate around it and it was just as tasty. A question: the gumbo really reduced in the pot so much so that I had to add almost a whole container of broth. Did you keep the lid on for that first 45 minutes of cooking? I watched your video and I couldn’t tell. Would keeping the lid on keep it from reducing?

      I usually add a tab bit more liquid( broth) if it reduces. I rarely cover while it cooks.
