Hey cousins! The sun is blazing, and one of the last things I want to do is sit in a hot kitchen, so lately I’ve been enjoying garden fresh salads for lunch! One salad in particular has been in heavy rotation in my household. That salad would be a fresh mandarin orange salad. It’s quite simple to make, and I almost always have everything on hand to make it. Let me tell you how I make it!

How to a Make Fresh Mandarin Orange Salad

Ingredients

Fresh lettuce and oranges along with almonds, chow mein noodles and poppyseeds are prepped for the Fresh Mandarin Orange Salad.

Salad

  • 1 bunch red leaf lettuce
  • 1 bunch romaine lettuce
  • 4 green onions, chopped
  • ½ cup slivered almonds
  • 1 can mandarin oranges, drained
  • 1 cup crispy chow mein noodles
  • ½ teaspoon poppy seeds
  • 2 cups chopped grilled or rotisserie chicken

Dressing

  • 3 tbsp sugar
  • ½  teaspoon salt
  • ½  teaspoon pepper
  • ¼  cup canola oil
  • 2 tbsp lemon juice
Tender chunks of chicken, bright mandarin oranges, crispy chow mein noodles and slivers of crunchy almonds are tossed with fresh lettuce and creamy dressing.

Steps to Combine the Fresh Mandarin Orange Salad

  1. Chop or tear the lettuce into bite size pieces. Wash and dry well.
  2. Add the lettuce into a large bowl and toss. 
  3. Top the salad with the chopped green onions, slivered almonds, mandarin oranges, chow mein noodles, poppy seeds, and chicken.
  4. Add the dressing ingredients to a medium jar. Cover tightly with a lid and then shake well.
  5. Pour the dressing over the salad then toss to combine all ingredients.
  6. Serve immediately.

Can I store the leftovers?

No, this salad is best the day it’s made. There is no point in keeping the leftovers, because it will be soggy from the dressing and oranges.
