A Tasty Recipe for Air Fryer Roast Potatoes, Onions and Squash!

Hey cousins! It’s officially fall (in my mind) so, I’m back with a fall-inspired recipe. I’m going to show you how to make Roast Potatoes, Onions and Squash in the air fryer. This recipe is pretty straightforward, and basic ingredients are used. Let’s get right to it!

Ingredients for Air Fryer Roast Potatoes, Onions and Squash

For this recipe I use a combination of potatoes, butternut squash, onions and fresh herbs. I will list the recipe here, but feel free to scroll to the bottom if you’d like to print the recipe card.

  • 2 large russet potatoes, cut into 1/2″ pieces
  • 2 cups sweet potato, cut into 1/2″ pieces
  • 1 cup butternut squash, cut into 1/2″ pieces
  • 1 medium red onion, chopped
  • 1/4 cup olive oil
  • 2 tsp fresh thyme
  • 1 tsp fresh rosemary, chopped
  • 2 tsp seasoning salt
  • 1 tsp coarse black pepper

How to Make Air Fryer Roast Potatoes, Onions and Squash

  • Combine olive oil, thyme, rosemary, seasoning salt and pepper in a small bowl and set aside.
  • In a large bowl, add all chopped vegetables and add the olive oil mixture. 
  • Toss well until all veggies are coated. 
  • Spread vegetables in an even layer in your air fryer. 
  • Air fry at 400 degrees F for 10 to 15 minutes or until tender and roasted.
  • Serve and enjoy!
