  2. Stir the apple mixture often to coat the apples in a brown sugar sauce evenly. Remove the from the heat and set to the side to cool to room temperature. Preheat the oven to 350 degrees 
  3. In a small bowl, add the sugar and cinnamon and whisk to combine. 
  4. Wrap the tortillas in a damp paper towel and microwave for 30 seconds. Lay the tortillas on a baking sheet and scoop ¼ cup of apple filling into each tortilla. Wrap the tortilla around the apple filling and place it seam down on the baking sheet. Repeat with all tortillas. 
  5. In a small bowl, add your butter and microwave for 30 seconds to melt. Brush each tortilla with the melted butter.
  6. Bake the taquitos for 15 minutes. 
  7. Brush on more melted butter on top of the taquitos. Now sprinkle the cinnamon sugar on top of the taquito. Drizzle the caramel sauce on top of the taquitos. Serve warm; add whipped cream and/ or ice cream.
  8. Serve & enjoy!

Ingredients

Apple Pie Filling:

  • 3 – 4 large apples peeled, cored, and diced (Gala or Granny Smith)
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • ½ tsp allspice
  • 1 tbsp cornstarch
  • ¼ cup apple juice

Tortilla Wrap:

  • 8-10 small flour tortillas
  • 2 tbsp melted butter
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • ½ tsp cinnamon

Toppings:

  • caramel syrup
  • Whipped cream
  • Ice Cream
