A Delicious Recipe for Brown Stewed Chicken!

Hey folks! In this post I’m sharing my recipe for Brown Stewed Chicken.

Brown Stewed chicken is a popular dish in the Caribbean, and there are many ways to prepare it. My recipe for brown stewed chicken is quite simple. I use  ingredients that are easy to find at the grocery store and are also easy on my pockets.

This dish takes about 1 hour to make, most of the time comes from stewing the chicken.

Brown Stewed Chicken

Brown Stewed chicken is a popular Caribbean dish with ingredients that you can find in any grocery store. This is a hearty, flavorful dish!

Ingredients

  • 1 1/2 lb chicken pieces
  • 1 tsp seasoning salt
  • 1/2 tsp ground black pepper
  • 1 tsp poultry seasoning
  • 1 tsp ground all spice
  • 1 tbsp minced garlic
  • 1 tsp onion powder
  • 1 tbsp brown sugar
  • 2 tsp white granulated sugar
  • 1 large onion chopped
  • 3 large carrots chopped
  • 1/4 cup vegetable oil
  • 2 tbsp ketchup
  • 2 cups hot water

Instructions

  • Clean the chicken, then set it in a large bowl. Season the chicken with the seasonings, and garlic, and rub in.
  • Cover and refrigerate the chicken for two hours.
  • Pour 1/4 vegetable oil into a pan, and turn the heat to medium high. Once the oil is hot, place the chicken into the pan.
  • Fry each side of the chicken until it browns, then remove the chicken and set it on a plate.
  • Add the carrots and onions to the pan, and fry until they soften. Pour out most of the oil, then add the ketchup. Stir the ingredients, and reduce the heat to medium.
  • Place the chicken back into pan, then pour in 2 cups of hot water.
  • Cover the pan with a lid, and let simmer 45 minutes. Be sure to stir occasionally so that nothing burns at the bottom of the pan.
  • Serve!

      A substitute for allspice is nutmeg, cinnamon and clove mixed together. You can also use 1/2 teaspoon cinnamon plus 1/2 teaspoon ground cloves.

    Hi Rosie is the minced garlic that you use from the jar or do you mince your own. I only ask because I do have a jar in my fridge (is that where you’re supposed to keep it after it’s opened?) but I always find myself cutting up fresh garlic. Either way garlic is garlic but I was just curious. I still haven’t made anything yet but I do enjoy watching the videos and I have also mentioned your website and recipes to a couple of my co workers. Bon Appetit. Also you served the brown stewed chicken with coconut rice but I don’t see the recipe for the rice. Am I missing something?

    I followed the recipe almost to a T for the brown stewed chicken cuz I cook for a huge fam so I had to double up. However, the sauce was really loose. Any suggestions?

    This recipe was the beat I’ve seen so far for brown stewed chicken. I added Sweet peppers and a scotch bonnet pepper for heat and it was amazing! I’ve been using your recipes for some years now and I must say they never disappoint.

    I love you and all of your recipes. You really have my family thinking I’m this great cook. i have followed this recipe twice. I wanted to say this time I didnt have any fresh onions to use for this recipe so I used half a package of Lipton’s onion soup mix within the actual stew and it tasted amazing. Thanks for all that you do!

    I love this recipe! I decided on a whim to make it on a busy day and it came out perfect. It’s so easy and so tasty. I was suspect about the ketchup but was pleasantly surprised that it complimentEd rather than overpowered the flavor. Can’t wait to try another one of your recipes!
