Hey, Cousins! Today, I’m coming to you with a breakfast recipe. Everyone who knows me knows how much I love breakfast food—eggs, bacon, pancakes, waffles… you name it, I love it! I could eat breakfast food all day, every day and never get tired of it. I’m the same way with desserts… which is exactly why I’m making a dessert-inspired breakfast recipe for y’all today: pineapple upside down pancakes, 100% homemade!

If I could get away with eating cake all day, I probably would. No joke! When my husband and I recently went out to breakfast, my eyes found the sweetest thing on the menu: pineapple upside down pancakes! I couldn’t believe it—I had to order it. I mean, come on, did you seriously think I would pass up the opportunity to eat pineapple pancakes for breakfast?!

While these restaurant pancakes made for a delicious breakfast, they weren’t the best pancakes. They were good and I really liked them, but I knew from the jump that I wanted to recreate these pancakes, Cousins Rosie style. So, I made a list of exactly what I wanted to improve on:

  1. The pancakes were good—however, I don’t think they were made from scratch. This isn’t necessarily a deal-breaker for me, but I knew I could make a tasty from-scratch pancake batter.
  2. The pineapple chunks were a little too big for me. I wanted to use crushed pineapple instead of huge pieces.
  3. I wanted pancakes that tasted more like pineapple upside-down cake. So, I knew I needed to make them sweeter with the addition of a few key ingredients.

I played around in the kitchen and came up with a homemade pineapple upside-down pancake recipe that is SUPER easy to make. It’s the perfect recipe for an Easter or Christmas breakfast or brunch. Maybe even for Mother’s Day!

Ingredients for Homemade Pineapple Upside Down Pancakes

Believe it or not, a from-scratch pancake batter is easier than you may think! As much as I love Bisquick and other quick pancake mixes, nothing beats a homemade buttermilk pancake batter. Making your own pancake batter is crazy simple, and it’s the perfect base for these decadent pineapple upside down pancakes. Scroll on down to the recipe card to find the complete ingredient measurements for these delicious pancakes.

  • Flour, Baking Powder, Baking Soda, Salt: these four ingredients are the base of your homemade pancake batter.
  • Buttermilk: for perfectly moist and fluffy pancakes. If you don’t have buttermilk, use regular milk or alternatives like almond milk or coconut milk.
  • Eggs: give structure to the pancakes.
  • Cinnamon & Nutmeg: warm spices that complement the sweet pineapple flavor.
  • Brown Sugar: for that caramelized flavor.
  • Crushed Pineapple: I prefer smaller pineapple pieces over big chunks. Canned crushed pineapple mixes perfectly into the batter.
  • Almond & Vanilla Extract: these are two key ingredients for that just-like pineapple upside-down cake flavor!

I think buttermilk is a crucial ingredient in homemade pancakes—it gives your pancakes a rich moistness that you can’t get with plain milk. However, if you don’t have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of regular milk. Let the mixture stand for about 10 minutes, and then you’re ready to go!

How to Make Pineapple Upside Down Pancakes (Steps + Video Tutorial)

Y’all ready to learn how to make the easiest pineapple upside down pancakes? If you’re a breakfast girlie like me, these homemade pancakes are the perfect treat – sweet, decadent, and ridiculously simple! No more searching for pineapple pancakes at restaurants near you when you can make an entire batch at home, all for yourself!

Pineapple Upside Down Pancake Recipe Steps:

  1. In a large mixing bowl, combine the dry ingredients for the pancake batter—all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  2. Add the wet ingredients to the same bowl—buttermilk, eggs, vanilla, and almond extract. Then add the crushed pineapple (you don’t have to drain the pineapple juice from the can).
  3. Heat your frying pan, large skillet, or griddle to medium heat and melt butter (you can swap butter out with coconut oil or canola oil if preferred).
  4. Pour 1/3 to 1/2 cup of batter per pancake onto the skillet (you can make them bigger if you want, but I find this size easiest to flip without a mess).
  5. Cook the pancakes until they’re golden brown on both sides, flipping when you see bubbles all over the top of the pancakes.

Y’all know that one of the main features of classic pineapple upside-down cakes is that sweet, tender caramelized pineapple ring on top. How the heck do you recreate that for these pineapple pancakes?! I gotcha.

Start by melting some brown sugar and butter in a pan over medium heat. Once that’s melted and combined, add the pineapple slices (you can also use pineapple chunks) and cook them in the brown sugar sauce until they’re soft, tender, and caramelized. Add the pineapple to your pancakes with a drizzle of sauce, and wooooowie, cousins—delicious!

Storing and Reheating Leftover Pancakes

If you make a big ol’ batch of pineapple upside down pancakes, they’re just as delicious days later! Store leftovers in a freezer bag or airtight container in the fridge for up to 4 days. Reheat the pancakes in the toaster oven for a few minutes or in the microwave for 15-second intervals until warmed through. Pack them in your kids’ lunches, or freeze a batch for fast weekday breakfasts!

Easy Homemade Maple Scones

One of my favorite things is a sweet breakfast treat. Whether it’s Homemade Banana Bread Donuts or an easy Apple Cake with Maple Glaze, nothing hits quite like a sweet, homemade baked good for breakfast.

That’s why I LOVE these buttery scones. They’re bursting with maple flavor, made with simple ingredients, and couldn’t be easier to make! Making homemade scones might sound intimidating, but I promise you’ll never go back to dry and crumbly store-bought scones once you make this easy recipe.

Ingredients for Brown Butter Maple Scones

You only need a handful of ingredients for this maple scones recipe – most of which you likely already have on hand if you’re an avid baker. Below, I will list the ingredients and equipment you need to make homemade maple scones with a sweet maple glaze. Remember to check out the recipe card for the complete directions and ingredient measurements!

  • Browned Butter: gives a rich, nutty flavor to the scones. You’ll want to use unsalted butter to make the browned butter.
  • All-Purpose Flour, Baking Powder, & Baking Soda: three key ingredients in just about any baking recipe.
  • Salt: enhances and balances the flavor of the scones.
  • Eggs: give body and structure to the dough.
  • Pure Maple Syrup and Maple Extract: doubling up on the maple flavor makes these scones extra sweet.
  • Buttermilk: helps keep the scone dough perfectly moist.
  • Coarse Sugar: a sprinkling of sugar on top of the scones before baking gives them a sweet, crunchy topping.
  • Powdered Sugar & Milk: along with some maple extract, these ingredients make up the sweet and simple maple glaze to drizzle over the warm scones.

What equipment do you need to make homemade maple scones? 

You don’t need specialty equipment to make these brown butter maple scones at home, but some tools will make the job easier.

  • Stand Mixer, Electric Hand Mixer, or Food Processor: you can mix the scone dough in one of these mixers. Because we’re working with cold butter, it’s easier than mixing by hand. But you do have to be careful not to overmix the dough!
  • Pastry Cutter: Also called a pastry blender, this handheld tool is helpful if you mix the dough by hand. It will cut the cold butter into the flour mixture, similar to making a pie crust!
  • Sharp Knife or Bench Scraper: the easiest tool for cutting scone dough when it’s sticky and soft. Bench scrapers are great multi-purpose tools you can use all around the kitchen.
  • Parchment Paper or Silicone Baking Mat: you’ll need a non-stick baking sheet for baking the scones, and using parchment paper or a baking mat makes for easy cleanup and perfectly browned scones.
  • Rolling Pin: helpful for rolling out the scone dough, but not necessary.
  • Wire Rack: helpful for cooling and icing the scones, but also not necessary.

How to Make Browned Butter for Homemade Scones

In my opinion, the hardest part of this recipe is browning the butter. It takes a bit of time and attention to ensure it doesn’t burn, but otherwise, it’s pretty easy to do! But what exactly is brown butter anyway?

Brown butter is just the caramelized milk solids in regular, unsalted butter after it’s been heated for long enough. When heated, the milk solids separate from the butter and caramelize, giving the butter a golden brown color and a rich, nutty flavor. It can be used in all kinds of recipes, from savory pasta dishes to cakes and chocolate chip cookies.

First, you’ll need unsalted butter, a light-colored pan, and a spatula – preferably a rubber one (or at least one that’s flexible). Using a light pan lets you easily see when the butter starts to brown, which will help you avoid burning it.

To make browned butter at home, follow these simple steps:

  1. Cut ½ cup of unsalted butter into slices. (If you want to make more than ½ cup, go ahead! You only need ½ cup for this recipe.)
  2. Melt the butter in a skillet over medium heat, stirring occasionally.
  3. Let the butter begin to bubble. If it starts to boil too fast, turn the heat down a touch. This is when the milk solids will separate and fall to the bottom of the pan.
  4. As soon as the butter turns a deep golden brown color and smells nutty and toasted, it’s done! Store it in a heat-proof bowl and allow it to cool and solidify until it’s ready to use.

And YES – you want to keep all those little brown flecks; that’s where the flavor is!

How long does it take to brown butter? 

Once the butter begins to melt, it should take about 5-8 minutes to brown over medium heat. If it cooks longer, it will most likely burn and be unusable.

How do you make browned butter in a dark-colored pan? 

It’s easiest to make browned butter in a light-colored pan, but if you don’t have one, you can still make browned butter – you just have to be extra careful! Keep a CLOSE eye on the pan – the heat should not be higher than medium. Set a timer. After about 7-8 minutes, pour the butter into a heat-safe bowl to check the color and aroma.

Can you make browned butter in the microwave?

Yes, you can – but (surprise) you have to be extra careful! Here’s a video tutorial on how to make browned butter in the microwave. The key is to use the right bowl (a microwave-safe one) and check the butter every minute while it cooks.

How to Make Homemade Maple Scones

Once you’ve got the browned butter, it’s a regular baking recipe! Here’s how to make delicious, moist, tender brown butter maple scones with a sweet maple glaze.

  1. Sift the dry ingredients in a large bowl: flour, baking powder, baking soda, and salt.
  2. Mix the cold, browned butter into the flour mixture. You can do this in the food processor or by hand using your fingertips or a pastry cutter. Mix until the lumps are no larger than the size of peas (it will be a crumbly mixture).
  3. Next, mix the wet ingredients in a small bowl: maple syrup, extract, buttermilk, and eggs. Pour the wet ingredients into the flour mixture and combine them into a loose dough – it’s okay to see some lumps and wisps of flour.
  4. Drop the dough onto a prepared baking sheet (lined with parchment paper or a baking mat) and form it into a circle about 3/4ths to 1 inch thick. You can use your hands or a rolling pin to do this.
  5. Cut the dough into 8 equal wedges. Slightly (and carefully) separate each wedge so they’re about 1 inch apart on the baking sheet, and sprinkle each with coarse sugar.
  6. Bake the scones at 400 degrees for about 18-20 minutes or until they’re a light golden brown. Cool them on a wire rack for 10 minutes before icing.

While the scones are baking, whip together the icing ingredients – powdered sugar, maple extract, and water – to create the sweet maple icing. Once the scones are slightly cooled (but still warm), drizzle them with the icing.

And there you have it! Perfectly moist, tender, delicious scones. A cup of tea or coffee and a warm scone make the perfect pairing just about any morning!

If you want a few tips and tricks for making the most delicious brown butter maple scones at home, I’ve got you covered! Making scones doesn’t need to feel like an intimidating task left to the best of bakers. Here are some tips for the next time you’re making this easy recipe.

  • If you want another sweet, warm flavor to complement the maple in these scones, use a little vanilla extract in the scone dough and maple glaze.
  • Want more texture in your scones? Add fillings like chopped pecans, walnuts, or butterscotch chips.
  • The key to the perfect scone – with that tender and moist yet crumbly texture – is COLD BUTTER (or even frozen butter).
  • Keeping everything else cold helps, too. Chill your mixing bowl, the sheet pan, and the pastry cutter before use. After cutting and arranging the unbaked scones on the baking sheet, pop them in the fridge while the oven preheats.
  • If you want perfect, light, and fluffy scones, use pastry flour instead of all-purpose flour—or a mixture of half and half.

Why aren’t my maple scones light and fluffy? 

If the scones are too dense and rock-hard, you likely overmixed the dough. Scone dough should just barely come together in coarse crumbs, with some flour still visible in the dough. It’s best practice to use your hands instead of an electric mixer to mix scone dough because it’s so easy to overmix.

Can I substitute heavy cream for buttermilk in this maple scone recipe?

If you don’t have buttermilk on hand, you can use heavy cream. The scones won’t have that slightly tangy flavor buttermilk provides, but heavy cream will give the dough the same moisture.

  • In a light-colored skillet over medium heat, cook butter until golden brown, stirring often. The butter solids will drop to the bottom of the skillet and turn dark brown.   • In a small bowl, whisk together syrup, buttermilk, egg, and maple extract. Add to dry ingredients and stir just until blended. You should be able to see a few wisps of flour. Don’t overmix!
    1/2 cup maple syrup, 1/2 cup buttermilk, 1 large egg, 1 tsp maple extract
  • Drop the dough onto a prepared baking sheet. With floured (or dampened) hands, press gently, shaping the dough into a 3/4-inch thick disk. Sprinkle lightly with coarse sugar.

  • Use a sharp knife to cut the scone dough into 8 equal wedges. The dough will be sticky – rinse the knife between cuts. Be sure to press the knife straight down and lift it straight up.  
  • Bake for approximately 18 minutes, until scones are light golden brown. Cool on a wire rack for 10 minutes. Carefully separate the scones.
  • Whisk together icing ingredients until smooth and drizzle over lukewarm scones.

When I make grits, I make them the easy way. I don’t use any heavy cream or milk—none of that “fancy” stuff! I like my creamy grits with a bit of butter, salt, and pepper. If you happen to be craving grits but don’t have any milk on hand, this creamy grits recipe is for you! 

As a kid who grew up in a Southern food household, I know a perfect breakfast when I see one. However, you can make this simple grits recipe for any meal. Enjoy grits with brunch—sweeten them up, or keep it savory and serve with your favorite brunch dishes. Whip them up as a side dish and serve just about any Soul Food recipe over a bed of creamy, salty grits—try smothered oxtailssucculent shrimp, or pot roast. There are also different types of grits. Stone-ground grits are what they sound like—dried whole corn kernels ground between stones. These are the good old-fashioned grits. Like I said earlier, this is a creamy grits recipe without milk! Now, many people think you NEED to add cream of milk to grits to make them creamy. I’m here to tell y’all this is NOT true whatsoever! You only need four ingredients to make my creamy grits recipe. Here’s what you need!

  • Quick Grits: I love Alber’s Grits—they’re high quality and always taste great every time I make a batch.
  • Water: you need three cups of water for this recipe.
  • Butter: I use salted butter. If you’re watching your salt intake, use unsalted butter or leave out the added salt.
  • Salt: you only need a little bit—just one teaspoon—to season the grits to perfection.

That’s it—those are all the ingredients I use to make creamy homemade grits. It’s pretty basic—I don’t add a ton of seasoning because I don’t need it! Some people like to add sugar to their grits; others make cheesy grits with shredded cheese. I am a simple salt & black pepper kind of girl. What kind of grits person are you?!   • Pearl Milling Company: you probably know this one as Aunt Jemima. Their old-fashioned grits are affordable and tasty (they have quick grits too).
  • Palmetto Farms: these are the gold-medal grits as far as most Southern cooks are concerned, but they’re on the pricier side. They’re straight-from-the-South stone-ground grits–you can’t get more authentic than that!

I’m back with another one-dish meal, this one’s for breakfast! Ya’ll know I love a dish that feeds a crowd. Even better if it can be prepped in advance. This hearty Overnight Hash Brown Casserole is ideal for large families or to serve guests. It’s also perfect for serving breakfast for dinner. 

Ingredients and Shopping List for Hash Brown Casserole

  • Shredded frozen hash browns — a 20 oz bag, thawed.

Do I have to thaw frozen hash browns for casserole?

Yes! Otherwise, they will add moisture to the recipe as they defrost. This will disrupt the texture, flavor, and baking time. No worries, as defrosting hash browns is fast and easy.

In the fridge: place a colander over a bowl, then empty the frozen hash browns into the bowl. Let them sit for 2 to 3 hours in the fridge. 

On the counter: place a colander over a bowl, then empty the frozen hash browns into the bowl. Let them sit for 30 to 40 minutes. You can chop and prep in the meantime. 

How long can uncooked hash brown casserole last in the fridge?

This Overnight Hash Brown Casserole recipe is designed to be prepped the night before or the morning before if you’re serving breakfast for dinner. This gives the spices time to meld together for a more intense flavor. 

Since the dish contains raw eggs and sausage, it must be baked within 48 hours. For ideal texture, bake within 8 to 12 hours. 

And yes, if you want to serve it ASAP you can bake it without letting it sit overnight. 

What to Serve with Hash Brown Casserole

Prep this the night before, so that you only have to prepare your beverages or side dish in the morning. This dish is hearty and filling, so a simple side or two will do.

Can You Freeze Overnight Hash Brown Casserole?

Yes! Since the sausage is uncooked, bake your casserole before freezing it. Or brown the sausage, let it cool, and add it to the recipe so that you can freeze your casserole before baking it. 

While most casseroles freeze well for 3 to 6 months, since this dish contains dairy, I suggest closer to 3 months. 

Freezing your uncooked casserole: Pour into a freezer-safe casserole dish with a lid or line the casserole dish with aluminum foil. Casserole dishes take up a lot of room in your freezer, and you can’t use your casserole dish in the meantime. So, line the dish with aluminum foil, leaving at least 4 inches of foil on each side. Let it freeze for about 24 hours. Once frozen, lift the casserole out of the pan by the sides of the aluminum foil. Wrap fully in foil, label, date, and pop it back in the freezer.  

Freezing your cooked casserole: let it cool and portion single servings into freezer-safe containers. Or wrap the entire casserole in aluminum foil before freezing. 

Reheating your pre-cooked frozen casserole: if it was cooked before freezing, transfer it to an oven-safe dish and cover it with foil. Preheat your oven to 350 degrees and bake until heated to 165 degrees. Depending on your portion size, the baking time will vary, so use a thermometer to test the internal temperature. 

Or defrost for 24 to 36 hours, and warm up in the oven or microwave. 

Heating your uncooked frozen casserole: if it wasn’t cooked first, or only the sausage was cooked, defrost for 24 to 36 hours and bake in a preheated oven at 350 degrees for 55 to 75 minutes. If it’s still frozen, add at least 20 minutes more, testing with an internal thermometer until it reaches 165 degrees. 

Pro tip—always place the thermometer in the center of the dish when testing the internal temperature. The center takes the longest to reach a safe temperature, so testing the sides won’t give you an accurate reading. 

How to Store Leftover French Toast Casserole

If your casserole dish has a lid, pop it on top and place it in the refrigerator. You can also cover your dish with saran wrap, aluminum foil, or a silicon baking dish lid. To save space in your fridge, transfer portions to a smaller airtight container. 

Enjoy your Overnight Hash Brown Casserole within 3 days; maybe take it to work for lunch! 

Reheating in the microwave: eggs can be finicky in the microwave, so reheat at 50 percent in 30-second intervals until warm. 

Reheating in the oven: preheat your oven, toaster oven, or air fryer to 350 degrees and bake until heated through. The smaller the portion, the faster it will reheat. Small portions may reheat in 10 to 15 minutes, while larger portions may take 20 to 30 minutes. Or eat it chilled! 

Hash Brown Casserole Toppings and Variations

Consider the variations below to utilize your leftovers or make this dish your own! 

  • Add garlic—dice 2 or 3 cloves of garlic and mix it in. 
  • Swap the veggies—use any kind of onion you have on hand. You can also swap the bell pepper for any chopped veggies. If you use mushrooms, cook and cool them first as mushrooms release moisture when they cook. 
  • Diced hash browns—if you prefer diced frozen hash browns, or that’s all you have in your freezer, defrost and use those. 
  • Swap the sausage—I love heat so I like to use a hot sausage, but you can use any breakfast sausage. You can also use one pound of cooked and chopped crispy bacon. Or substitute for a pound of diced ham or any ground meat, including Italian sausage, or ground turkey, chicken, or beef.   
  • Sharp cheddar—give it a bit of a kick by swapping the Colby for sharp cheddar cheese.
  • Fresh herbs—top with your favorite fresh herbs. Chives are a top pick, as well as chopped parsley, basil, oregano, and thyme.
  • Toppings—top with salsa, hot sauce, Pico de Gallo, sour cream, or diced tomatoes.

How to Make Overnight French Toast Casserole

Ingredients

Frech Toast Casserole

  • Brioche bread—2 loaves of this soft and fluffy French bread. 
  • Eggs—8 large eggs, either white or brown. 
  • Whole milk—1 ½ cups whole milk or unsweetened soy, almond, or oat milk.  
  • Sweet Cream creamer—1 cup, use the rest to sweeten your coffee.  
  • Brown sugar—3/4 cup of packed brown sugar. 
  • Cinnamon—1 tablespoon for flavor and aroma. 
  • Nutmeg—1 tablespoon for warmth and balance. 
  • Vanilla—1 tablespoon of vanilla extract or pure vanilla. 
  • Toppings—I top with vanilla icing, whipped cream, and powdered sugar. This recipe is already sweet, but some guests may want maple syrup. 
  • Garnish—fresh mint, strawberry, or berries of choice. 

Vanilla Icing

  • Powdered sugar—2 cups for sweet icing. 
  • Whole milk—2 tablespoons of whole milk or unsweetened non-dairy milk. 
  • Vanilla extract—you can use pure vanilla.

Is French toast really French?

Just like French fries aren’t French cuisine, French toast isn’t either. However, it was popularized in America by French immigrants. In France, it’s referred to as “pain perdu”, which translates to “lost bread”. While today’s recipes call for fresh bread, it was initially an innovative way to use stale bread.

Lost bread dates back to ancient Rome during the 15th century. Romans would dip bread in milk and/or eggs before frying it to create what they called “pan dulcis”, which also translates to “lost bread”. It was a favorite of Henri V and his court, and similar versions spread throughout Europe—and to the French who introduced it to America. 

Why do I need a bread knife for this French Toast recipe?

Brioche comes in loaves, so you will need to slice them yourself. As a soft and fluffy bread, it can squish down when you slice it with a standard knife. A bread knife has scalloped edges that cut without squishing. 

If you don’t have a bread knife, use any serrated knife. If your only serrated knife is a small paring knife, cut your bread in half lengthwise before slicing it into 1 to 2-inch chunks. 

No worries if all you have is a standard knife, as the bread will puff up a bit while it bakes.

What is the best bread for French Toast?

Even if I’m making Traditional French Toast, I prefer to use brioche because it is soft, fluffy, and slightly sweet. Some recipes call for sourdough or French bread, but even with soaking the bread overnight, I find these breads to be a bit dry.

Brioche can be found in Walmart or any grocery store. If you can’t find brioche, you could substitute for another thick-cut bread. 

Top options for French toast include:

  • Brioche
  • Challah 
  • Pullman loaf
  • Thick-cut white bread

Do I have to let the bread sit out overnight after cubing it?

After cubing the bread, warm it in the oven at 200 degrees for 1 hour, or let it sit out overnight. Or for any 8 to 10-hour block of time. This dries the bread a bit (not too much) so that your Overnight French Toast Bake won’t be soggy.  

How long does French Toast Casserole last in the fridge?

This recipe will stay fresh for up to 3 days in the refrigerator, but it isn’t likely to last that long! 

If you are serving a small group, freeze your leftovers. 

How to Store Leftover French Toast Casserole

If your baking dish has a lid, let it cool and pop the lid back on. If not, transfer your leftovers to an airtight container to keep them fresh. Saran wrap or aluminum foil won’t create the airtight seal required to keep this recipe soft. Consider ordering a silicon baking dish lid for the next time you have leftovers in your casserole dish.  Leftovers will stay fresh for 3 days. 

Freezing: Bread is airy inside, which can lead to freezer burn. To prevent freezer burn, cool your Overnight French Toast Bake on the counter. Then wrap it in saran wrap or freezer paper before placing it in an airtight freezer-safe container. Freeze for up to 3 months. Defrost overnight before eating. 

Reheating in the microwave: bread can get hard if microwaved for too long. So, microwave single servings on low in 30 second intervals. 

Reheating in the oven: you can use a toaster oven or your standard oven to reheat but your air fryer may dry the bread out. Preheat your oven to 350 degrees. Single or small servings will reheat in 8 to 10 minutes, while larger portions will take 15 to 20 minutes.

Fun French Toast Casserole Recipe Variations

I always encourage you to make your recipes your own! Below are a few seasonal adjustments and delicious ways to personalize this recipe. 

  • Christmas variation—swap the milk for eggnog for a festive holiday variation. 
  • Fall variation—swap the cinnamon and nutmeg for pumpkin pie spice or apple pie spice.
  • Fruity toppings—top with any kind of fresh or defrosted fruits, fruit preserves, or fruit pie filling. 
  • Drizzle—instead of the vanilla frosting, you could drizzle caramel sauce or chocolate sauce on top. 
  • Cream cheese frosting—instead of the vanilla frosting, spread a light layer of cream cheese frosting on top. You can find a cream cheese frosting recipe in this recipe! 
  • Texture—add a bit of crunch by sprinkling chopped pecans or walnuts on top or add texture with chopped dried banana, raisins, or other dried fruits.  
  • Brighten—add a tablespoon of lemon or citrus zest to the milk and cream mixture.

  • Whip Cream or Powdered Sugar

  • Cut the Brioche bread into chunks and lay them on a large baking dish.
    2 loaves Brioche bread
  • Set the bread out overnight or place it in an oven at 200 degrees for 1 hour.
  • Coat your baking dish with non-stick baking spray.
  • Add the bread chunks to the baking dish. Set to the side.
  • In a large bowl, add your milk, cream, eggs, brown sugar, cinnamon, nutmeg, vanilla extract. Whisk to combine.
    8 large Eggs, 1 ½ cups milk, 1 Cup Sweet Cream coffee creamer, ¾ cups Brown Sugar, 1 tbsp ground cinnamon, 1 tbsp ground nutmeg, 1 tbsp Vanilla extract
  • Pour your cream mixture on top of the bread.
  • Lightly press down on the bread with your hands for 3-40 seconds so the bread on top can soak in the cream mixture.
  • Cover the baking dish and place it in your refrigerator overnight.
  • Preheat the oven to 350 degrees.
  • Cover your French toast casserole with foil that has been coated with non-stick baking spray.
  • Place the baking dish in the center of your oven.
  • Bake for 35 minutes, then remove the foil and bake for another 30 minutes.
  • Allow to cool for 10-15 minutes.
  • In a medium-sized bowl add all of your icing ingredients.
    2 cups powdered sugar, 2 tbsp Whole milk, 1 tsp Vanilla extract

You can never go wrong with cheese and broccoli, and when made as a frittata—it’s something both kids and adults will enjoy. 

Not only are frittatas easy to make, but the ingredients can be prepped the day before. Or you can make it 1 to 2 days before you plan to serve it. In fact, it tastes better the next day! 

What is a Frittata?

Frittatas are an Italian dish that can be served any time of the day. While an elevated menu item in the states, in Italy, it’s a quick snack made with leftover vegetables. The name translates loosely to “fry”, as it’s an open-face omelet that you bake in your oven. You can also find similar dishes in Spain made with potatoes. It’s also a faster, easier, and crust-free version of a French quiche.  

If you’ll be enjoying this delicious dish for breakfast or brunch, you can serve it with bacon, ham, fruit, or something sweet—such as my Pumpkin Cinnamon Rolls. And maybe a mimosa! 

For lunch or dinner, you can serve it with soup, salad, or your side dish of choice.  

Prep or Make this Cheddar and Broccoli Frittata Ahead of Time

A large cast iron skillet holds a freshly baked breakfast frittata made with eggs, cheddar cheese, broccoli, and green onions. The frittata is sliced into 8 pieces, with one piece removed from the pan.

If time is tight, feel free to chop the veggies and shred the cheese ahead of time. You can even beat the eggs and mix them with the half-and-half and spices the night before. Just be sure to store your egg mixture separately from the veggies.

You can also bake your frittata 1 to 2 days in advance if that fits better into your schedule. It is safe to eat for 3 to 4 days after it bakes. 

Serve Cold, Hot, or Room Temperature 

This dish is delicious at all temperatures. Straight out of the oven is great if you are in the mood for something warm. You can also chill it in the fridge and serve it cold, or you can eat the leftovers cold. 

One of the most popular ways to serve frittata is at room temperature. To serve at room temperature, let it cool after it comes out of the oven for about 1 hour. Then slice and eat. Or chill it in the fridge and let it sit out for about 1 hour before serving. Just don’t let it sit outside of the fridge for more than 2 hours.

If it’s chilled and you want to warm it up, the oven is the best way to go. Preheat your oven to 350 degrees and heat it for 20 to 25 minutes. Eggs are delicate, so reheating it in the microwave can dry the frittata out. For best results, set your microwave to 50% and warm it up in 30-second intervals. Let it sit for 1 minute once it’s at your desired temperature. 

You can freeze leftover frittata for up to 3 months. Slice into individual servings, wrap each slice in cling wrap, and place the slices in an airtight container. 

Enjoy as an Appetizer

Some restaurants and wine bars serve their frittata as an appetizer. So, consider it as an appetizer the next time you have a dinner party. Since it’s something you can prep a day or two in advance, it will lighten your load the day you are entertaining. It also travels well in the car if you will be bringing a dish to friends and family. 

Instead of slicing it into pie-like servings, slice your Cheddar and Broccoli Frittata into half-inch cubes. Arrange them on a seasonal serving tray and place a toothpick in for an easy bite-sized treat.  

Do I Need a Cast Iron Skillet to Make a Frittata? 

There are a few reasons to prepare your frittata in a cast iron skillet. First and foremost, you can transfer it straight from the stovetop to the oven for an easy one-dish meal. A well-seasoned cast iron skillet is also naturally non-stick. Finally, cast iron will sear your veggies, adding to your frittata’s flavor. 

If you don’t have a cast iron skillet, you can transfer the ingredients to an oven-safe dish. Just make sure that the sides are high enough for the ingredients to rise. If you are using a flat dish, it may not need to cook as long, so keep a close eye. 

Yes, This Cheddar and Broccoli Frittata is Vegetarian!

Have a vegetarian coming over to eat and not sure what to serve? This meatless dish is ideal. However, it contains a lot of dairy, so it’s not vegan-friendly. Not to worry, though, as meat eaters won’t feel deprived, as it’s protein-packed and delicious. And you can always have a meat appetizer or serve bacon or ham as a side.

  • Preheat the oven to 350 F.
  • In a medium bowl, combine the eggs, half-and-half, salt, pepper, and cayenne pepper and whisk until smooth.
  • Add the shredded cheese and set aside.
  • In a large cast iron, melt the butter (or add in the vegetable oil) and broccoli and cook over medium heat for 1-2 minutes before adding in the green onions and minced garlic. Cook for another 2 minutes.
  • Spread the vegetables in an even layer of the pan, then slowly pour in the egg mixture.
  • Continue to cook on the burner for 30 seconds to a minute.
  • Bake in the oven for 13-15 minutes.
  • During the last 5 minutes sprinkle some more cheese on top.

Calling all muffin lovers, especially those asking me to post more easy muffin recipes! Today, I’m sharing one of my all-time favorite muffin recipes. I’ll be showing you how to make moist homemade sweet potato muffins!

Now, y’all know I love sweet potato everything! I’ve made sweet potato fudge, a tasty sweet potato cobbler, and of course, the ultimate sweet potato pie. Sweet potatoes are holiday staples, but they’re also readily available year-round—personally, I think we need to appreciate this delicious veggie more often!

Sweet potatoes are an excellent source of fiber, antioxidants, and carbs. They are naturally sweet and go great in savory dishes too. Whether roasting, mashing, dicing, or baking with sweet potatoes, they’re a fantastically tasty ingredient!

Now, when it comes to my moist sweet potato muffins recipe, these babies are perfect for any time of year. Serve these delicious muffins for breakfast, a snack, or as a yummy side dish for dinner. Sweet potato muffins can be eaten plain or warm with butter and honey, and you are good to go! So, let’s jump on into this sweet potato muffin recipe.

Simple Ingredients for Homemade Sweet Potato Muffins

This easy muffin recipe uses basic ingredients you likely already have on hand (other than the sweet potatoes). All the ingredients combined make a thick and creamy muffin batter. Once the muffins are done, they are incredibly moist with the perfect amount of sweetness.

Most importantly, you need about two medium-sized sweet potatoes for this muffin recipe. If you use larger sweet potatoes, you might have to slightly adjust the measurements of the other ingredients to accommodate them (exact measurements are provided in the recipe card below!). Here’s everything else you need to make moist homemade sweet potato muffins:

Dry Ingredients for Sweet Potato Muffins:

  • All-purpose flour (you could use almond flour if you prefer gluten-free)
  • Granulated white sugar and brown sugar
  • Ground cinnamon and nutmeg (you could also use pumpkin pie spice or my Rosamae Seasonings yams spice—both a perfect blend of spices for this recipe)
  • Baking soda, baking powder, and salt (Pro-tip: sweet potatoes are alkaline and could react with the aluminum in baking powder, giving your sweet potato muffins blue streaks. Avoid this by using aluminum-free baking powder!)

Wet Ingredients for Sweet Potato Muffins:

  • Two large eggs
  • Vegetable oil, or another neutral oil like canola or grapeseed
  • Heavy cream (helps to make the muffin batter extra creamy, resulting in perfectly moist muffins)
  • Vanilla extract (y’all know I don’t approve of that imitation crap—pure vanilla only in this house!)

Equipment Needed to Make Sweet Potato Muffins:

  • Large mixing bowl for your wet and dry ingredients
  • Bake dish or cookie sheet to bake the sweet potatoes
  • Hand mixer to whip the sweet potatoes (you can do this by hand, but it takes a lotta upper-body work!)
  • Use an ice cream or muffin scoop to measure out the muffin batter
  • A non-stick muffin tin (you can also use paper muffin liners for extra non-stick assurance)

Sweet Potatoes vs. Yams: What’s the Difference?

This is the ultimate question: what’s the difference between a sweet potato and a yam? If you’re at your everyday grocery store, staring at the produce, wondering what the heck to pick, here’s the thing: there’s no difference. In typical Western markets, sweet potatoes and yams are essentially the same.

The “yams” you see in your local grocery store are really just orange-fleshed sweet potatoes (and yes, there are different kinds of sweet potatoes). Real yams will be a bit harder to find—you might have to venture to an African specialty market to find honest-to-goodness yams. Yams are essential in West African food traditions and entirely different from your average sweet potato.

The short answer is this: if you’re not making a traditional West African or Latin American-inspired dish, then sweet potatoes and yams are the same. I have both sweet potato and yam recipes on my blog, and I use orange-flesh sweet potatoes in both. Here’s a helpful graphic on the visual differences between sweet potatoes and yams!

How to Make Moist Homemade Sweet Potato Muffins

Now, I will say that while this sweet potato muffin recipe is pretty easy overall, it comes together in a few different parts. So, let’s dive into how to make yummy, moist sweet potato muffins.

Step 1: Bake Your Sweet Potatoes

First things first, ya gotta bake those sweet potatoes! Preheat your oven to 375 degrees. Prep the sweet potatoes by washing them with cool water and scrubbing the flesh—this will eliminate any dirt and grim; y’all don’t want to eat that! Cut them in half for a quick-baked sweet potato—this will lower your baking time a bit!

Put the sweet potatoes on a parchment-lined baking sheet or in a baking dish and bake for 35-45 minutes. Check them at around 35 minutes, and use a fork to test doneness. The orange flesh should be soft and creamy, easily giving way to the fork when you apply some pressure. Once they’re done, let them cool to room temperature, then scoop out the insides into a bowl. We won’t be using the skins in this recipe (but I think a sweet potato skins snack would be bomb.com!)

Step 2: Mix the Sweet Potato Muffin Batter

Next step, we’re movin’ on to the batter. Use a hand mixer to whip the sweet potatoes in a large mixing bowl until they’re nice and creamy. You don’t have to add anything else to them at this point.

Then you’re going to mix the dry ingredients in a medium bowl: flour, sugars (white and brown), spices, salt, baking powder, and soda. Next, add the oil, eggs, cream, and vanilla to the large mixing bowl with your whipped sweet potatoes. Use your hand mixer or a spatula to thoroughly mix all the wet ingredients until well-combined.

Finally, add the dry ingredients to the wet ingredients and fold to combine. The batter is going to be THICCCK! This is perfectly fine—do not add more liquid to thin it out!

Step 3: Scoop and Bake!

Spray your muffin pan with a non-stick spray (you could also use paper liners). Then, take a muffin scoop or a 1/4th cup measuring cup and scoop the muffin batter into the muffin tin. Bake the sweet potato muffins for 20-22 minutes, or until a toothpick inserted in the center comes out clean. Allow them to cool or serve them nice and warm with some honey and butter.

These sweet potato muffins are perfectly moist with a fluffy texture and a naturally sweet flavor. They are SO FREAKIN’ GOOD, y’all.

Tasty Mix-Ins and Variations for Sweet Potato Muffins

What can you add to sweet potato muffins to knock up to off-the-charts deliciousness? I’ve got a few ideas for you!

  • Chocolate chips—dark chocolate chunks or chips would be BOMB in these muffins.
  • Nuts like chopped pecan or walnuts.
  • A sweet drizzle like a classic confectioners sugar icing (powdered sugar, milk, and vanilla), or a caramelly praline topping from my sweet potato praline cheesecake recipe.
  • Crystalized pie sugar and cinnamon sprinkled on top of the muffins before baking for a sweet, crunchy topping.
  • A cinnamon streusel topping (see my dutch sweet potato pie recipe for the crumble topping).

Can I use sweet potato puree in my sweet potato muffins?

Yes, you can use a canned sweet potato puree as a shortcut in this recipe! While I think the natural sweetness from real sweet potatoes is the best, it’s perfectly okay to use a puree if you’re short on time. I would recommend 1.5-2 cups of sweet potato puree for this muffin recipe.

How can I make my muffins moister?

The number one way to keep these sweet potato muffins nice and moist is to mix the wet and dry ingredients separately! Mixing these ingredients separately will ensure you don’t overmix the muffin batter. Adding a scoop of Greek yogurt or sour cream into the batter can provide extra moisture. Other tricks for super moist muffins include making sure your oven temperature is accurate and filling empty muffin cups with water to ensure even cooking.

How do you store sweet potato muffins?

If you manage to have leftover muffins after serving these delicious babies, then the best way to store them is in an airtight container. If you’re keeping them at room temperature, include a paper towel on the bottom of your container to avoid a sticky mess. Sweet potato muffins will last for:

  • 3-4 days at room temperature.
  • Up to 1 week in the refrigerator.
  • Up to 3 months in the freezer.
